Vegan toffee apple upside-down cake
Ingredients -
2 tbsp vegan margarine
3 dessert apples
1 cup sugar
1 ¼ cup flour
1 tsp baking soda
1 ½ tsp autumn spice blend (cinnamon, nutmeg, cardamom, ginger)
1/3 cup sunflower oil
1 tsp red wine vinegar
1 lemon zested
¾ cup shelled walnuts
¾ cup water
Directions -
Preheat the oven to 350ºF, grease and line the base of a cake tin.
2. Core and coarsely grate 2 of the apples and finely slice the remaining apple.
3. Melt 2/3 cup of the sugar with the margarine in a pan, then pour into the prepared tin. Top with the sliced apple in a single layer.
4. Combine the flour, the other 1/3 cup of sugar, the baking soda and mixed spice in a bowl.
5. In a separate bowl, combine the oil, water, vinegar, grated apple and lemon zest.
6. Combine the dry ingredients with the wet, quickly but thoroughly.
7. Roughly chop and stir in the walnuts.
8. Pour mix over the layer of apples in the cake tin.
9. Bake for 30 minutes, or until a skewer comes out clean. Leave the cake to cool for 5 minutes before turning out.
Brazilian National Cocktail - Caipirhna
Caipirihna / Caipiroska ingredients:
Cachaça — We’ll be using sustainable, zero-waste focused Novo Fogo Silver Cachaça.
Can’t find Cachaça near you? Fret not, substitute with Vodka to make a Caipiroska instead!
2-3 whole Limes
Granulated sugar — We recommend cane sugar, but white sugar works too!

Cutting board
Knife
Muddler or anything that’s good at pressing and smashing food
Cocktail shaker or mason jar with a sealable lid
Wooden mixing spoon
Glass for serving
